Harissa Roasted Carrots

Harissa Carrots

Ingredients:

4 or 5 whole large carrots

3 tablespoons harissa

Beech Smoked Droitwich Salt

Serves 3 or 4 as vegetable side dish

Method:

Oven to 180 degrees

Peel the whole carrots and coat them with the harissa paste and season generously with Beech Smoked Droitwich Salt. Cover with tin foil and roast in the oven for 30-35 minutes. Remove the foil, increase oven to 200C, return to the oven and bake until carrots take on a roasted and slightly charred appearance

Serve with roast dinner or crusty bread and seasonal veg as a main.
